Issue/update package build process

Description

Fix ci:

1. Update build process to kick out poetry
2. Update PyYAML version to a python3.11 compatible one
3. Update container build process to also use python3.11
4. Update test fixtures (helped to investigate issues)
5. "Fix" type checking, it seems to be a bit more strict, and doesn't interact well with pydantic
